???? EAT-THE-RAINBOW SMOOTHIE BOWL ????

Chia pudding layer:
1 cup coconut milk
1/4 cup chia seeds
@just_blends butterfly pea flower powder (for top)

Pink pitaya smoothie:
1 banana, chopped and frozen
1/2 pink pitaya, chopped and frozen
1 scoop ???? protein powder (@noudderprotein)
2 tbsp coconut yogurt (@enjoyyoso)
2 tbsp almond milk
@just_blends pink pitaya powder
.
Combine chia pudding ingredients and refrigerate minimum 2 hours. Take 2 tbsp of the chia pudding and mix in @just_blends butterfly pea flower powder to achieve purple colour. Add all smoothie ingredients to your #vitamix and blend until smooth. Layer chia pudding, then smoothie, then fruit and coloured chia pudding – then DIG IN! ????

This little plant is known as a chain of hearts or rosary plant (Ceropegia). ♥️ My mom had one when I was growing up that I just loved. When it flowered, it was especially beautiful. She had so many house plants. I’m sure my my love of plants and animals comes from watching her care for these magnificent creatures. ???????? She is kind of a unicorn ???? with house plants especially. There were some that were around for most of my youth, they were like close friends. But I was generally wired to make friends with plants and animals. We would go camping quite a bit. After getting into camp, I would go exploring, making new friends. Some human, mostly plants and creatures. They would show me cool hiding places or help me to climb hillsides.
At my house in Fair Oaks by the American River I would spend hours outside every day during the summer making friends. And when my brother Adam was old enough I’d take him to secret places along the creek out to the river, exploring these magical places where fairies and gnomes hid.
Many hot days I would sit in the shade with my back against a tree, reading a book near my my neighbor’s beehives. Watching the bees, spotting fairies dart through the oak woodlands, delighting at a salmon returning up the river to give her life for the next generation. These were moments when I came to understand that my role was to speak for the protection of these magical places, these magnificent creatures, this precious ecology of relationships.
I’m grateful to my mom for helping me see the world differently, for giving me space to explore, and climb and be free to wonder as wonder. * * *
